What roasting actually does

Hojicha is not a separate plant or a decaffeinated product. It is the same Camellia sinensis leaf as other green teas, changed by one extra step: high-heat roasting.

How Roasting Changes the Leaf

Unroasted leaf is steamed

Japanese green tea starts by steaming fresh leaf to stop oxidation early, preserving green color and grassy, vegetal flavor.

Hojicha leaf is then roasted

Instead of stopping there, hojicha leaf goes into a hot roasting drum. This extra step is the entire difference between hojicha and sencha.

Heat degrades caffeine-bearing compounds

High roasting temperatures break down a portion of the caffeine present in the leaf, which is the main reason hojicha reads as gentler than unroasted green tea.

Catechins and tannins drop too

The same heat reduces catechins, including EGCG, and tannins. Less tannin means less astringency and a softer, less bitter cup.

Pyrazines replace grassy notes

Roasting triggers Maillard browning reactions that produce pyrazines, the aroma compounds responsible for hojicha's toasty, nutty smell.

Lower acidity

Roasted teas are generally described as lower in acidity than unroasted green tea, which is part of why hojicha is often recommended for people avoiding acidic drinks.

L-theanine remains, somewhat reduced

Hojicha still contains L-theanine, the amino acid associated with calm alertness in tea, though roasting reduces it somewhat compared to unroasted leaf.

Antioxidant profile shifts

Roasting reduces catechin-based antioxidants like EGCG but can produce other roasting-derived antioxidant compounds. The overall antioxidant profile changes rather than simply dropping.

Less bitterness, less astringency

Lower catechin and tannin content after roasting is the main reason hojicha tastes rounder and less bitter than sencha or matcha.
